Gluten-Free Chewy Fudge Brownie Recipe
I’m picky when it comes to brownies, so I was pretty ecstatic when I came up with this delicious gluten-free chewy fudge brownie recipe. They have that dense luxury we want our brownies to have while still melting in your mouth with chocolate lust. Trust me, you’ll be craving these after your first bite.
When I found out I had PCOS (if you don’t know what this is, I have an article talking about it), I immediately went online to search for ways to help reverse symptoms. The main consensus on most sites was that I needed to eliminate dairy, gluten, and soy from my diet. So I did. I did, and I failed, I should say.
Eliminating that many food groups all at once is close to impossible. So, instead of going that way, I decided to remove only one at a time. Then I would incorporate them back to see if I had any noticeable differences happen (aka the Elimination diet).
When it came time to gluten, I immediately noticed a difference. My digestive system regulated, my mind felt clear, and I felt better in my skin. Then I tried some bread to see what would happen. Let’s say it wasn’t pretty about six hours later.
Now that I knew I was gluten intolerant, I could accurately find a diet that fit my requirements.
I’m not going to lie, it was difficult. Most restaurants near me don’t have gluten-free items, and you don’t realize just how much gluten is in your everyday life.
However, I did do it and now successfully live without gluten… and I never feel like I’m missing out! The biggest struggle for me? Dessert! I have the biggest sweet tooth you have ever seen (a symptom of PCOS too).
So, while I have found gluten-free versions, there was always one dessert I could never quite master; the brownie. I used to make the most delicious chewy brownies and, now that I was doing gluten-free, were only making these cake-like recipes that were so so.
Then I came up with this recipe. The ULTIMATE gluten-free chewy fudge brownie recipe that we all need in our lives. It’s easy, delicious, and so freaking chewy… seriously. While it is higher in sugar (as in don’t eat the entire pan because consequences will ensue), it’s definitely the perfect treat for special occasions.
Trust me, you’ll feel like you died and gone to chocolatey heaven after just one bite! If this is too much chocolate for your liking, however, you can always try my peanut butter chocolate chip cookies that are gluten-free as well!
How to make this gluten-free chewy fudge brownie Recipe.
First off, you’re going to need a few things, including:
- 13×9 pan
- Two mixing bowls
- Measuring cups
If you have a mixer, that would be helpful, but 100% not necessary. I did perfectly fine without one for this recipe. You’ll also either want a pan, mug, or kettle to heat your water to boiling. I used a cup and microwaved the water for around three minutes, but do whatever works for you!
Now, before we start mixing our gluten-free brownie recipe, you’ll want to preheat your oven to 350 degrees Fahrenheit and coat your 13×9 inch pan in oil. I used olive oil, but you can use whatever you have (butter works as well).
Let’s start mixing Our Gluten-Free Brownie Recipe!
In a microwave-safe bowl, start whisking cocoa powder, baking soda, and boiling water. If you are using dutch-processed cocoa powder than you can skip the baking soda. This step is here to help cancel out some of the bitterness.
Next, you’ll add in your chocolate chunks, whisking until smooth. If the chocolate is not mixing well, then you can add it in the microwave for 30-second intervals until you get everything blended. When it comes to chocolate, you can really use whatever you like. Whether it be dark, milk, morsels, or chunks, use whatever to get that chocolatey flavor.
Once everything is fully incorporated, you’ll start whisking in the melted butter, oil, eggs, yolk, and vanilla extract. The reason there are so many eggs in this recipe is to give the brownie that chewy consistency. Plus, you can save the egg whites in your fridge to make an omelet or another recipe later!
After everything is mixed, add in your sugar. Now you can set this aside and get another bowl to add in your gluten-free flour and salt. You’ll take the mix and incorporate it into the rest of the recipe, mixing until everything is thoroughly blended.
Lastly, fold in your chocolate chips. Again, use whatever you like! I had semi-sweet morsels on hand, so that is what I used, but this brownie recipe doesn’t judge!
Now we are on to the baking portion.
You have everything mixed and ready to bake! Using a spatula, pour the recipe into the 13×9 inch pan, using your spatula to distribute everything evenly. You’ll bake for around 30-35 minutes, or until you can put a toothpick (or knife) in the middle and it comes out clean.
Once finished, let it sit for about 30 minutes to an hour before hopelessly devouring. You could move this to a wire rack for cooling (especially if you used tinfoil underneath), but it really isn’t necessary.
See? Such an easy gluten-free brownie recipe! I couldn’t believe how easy it was to re-create one of my favorite desserts. This proves to you how much I overthink everything in my life. Everything.

Gluten-Free Chewy Fudge Brownies
- Mixing Bowl

- ⅓ cup cocoa powder
- ¼ tsp. baking soda
- ½ cup boiling water
- 2 oz. chopped chocolate chunks
- 4 tbsp. butter, melted
- ½ cup olive oil
- 2 large eggs
- 2 large egg yolks
- 2 tsp. vanilla extract
- 2 cups granulated sugar
- 1¾ cup gluten-free flour I use Bob's Red Mill 1 to 1
- ½ tsp. kosher salt
- 6 oz. chocolate chip morsels
- Preheat oven at 350° Fahrenheit. Then prepare the 13×9 inch baking pan by covering it in either oil or butter.
- In a microwave-safe bowl, combine cocoa powder, baking soda, and boiling water until smooth.
- Add in chopped chocolate until fully incorporated, microwaving in 30-second intervals if needed. Once done, whisk in butter, oil, eggs, yolk, and vanilla extract until smooth. Add in granulated sugar and set aside.
- In another bowl, mix gluten-free flour and salt. Incorporate into 'wet' ingredients until all fully mixed. Finally, add in chocolate chip morsels.
- Pour mixture into a 13×9 inch pan, using a spatula to add in evenly. Bake for 30-35 minutes or until a toothpick can be stuck in the middle and taken out cleanly.
- Let cool down for about 30 minutes to an hour and enjoy!
